Banana Nut Loaf

Banana loaf is one of my favourite things to bake, and this loaf is so soft and fluffy you’ll certainly indulge in a second slice. I’ve topped this loaf with brown sugar and walnuts, which makes it even more delicious. Enjoy!

Ingredients

1/4 cup chopped walnuts

2 tbsp brown sugar

2 large eggs -room temperature

1/2 cup sugar

1/4 cup canola oil

2 tsp vanilla

1/2 cup whipping cream -room temperature

3/4 cup mashed banana

1 1/2 cups flour

2 tsp baking powder

1/3 cup chopped walnuts


Directions

- Mix together the walnuts and brown sugar. Set aside.

- Line a loaf pan with parchment paper, leaving a few inches of parchment paper to hang over all four edges.

- Pre-heat the oven to 350 degrees F.

- Whisk together the eggs and the sugar.

- Whisk in the oil and the vanilla.

- Whisk in the whipping cream.

- Whisk in the mashed banana.

- Put the flour and the baking powder into a sifter and gradually sift and whisk the dry ingredients into the wet ingredients. Don’t over mix.

- Fold in the walnuts.

- Pour the batter into the pan.

- Top with the walnut and brown sugar mixture.

- Bake for 45-50 minutes or until you can pierce the middle of the loaf with a toothpick and it comes out clean.

- Lift out the loaf from the pan and place it on a wire rack. Remove the parchment paper.
